Kefir
is specially fermented
milk originating
from the Caucasian
region. Kefir grains
consist of the lactic
acid bacteria and
yeast are added
to soy milk that
has been pasteurized
and cooled to 25oC.
After period of
fermentation lasting
around 18 hours,
the grains are removed
by filtration. The
beverage is freeze-dried
and grinded to fine
powder for use.
